Sauvignon Blanc and Pinot Blanc on relax on the skins for about twelve hours, while the Zweigelt is pressed directly; everything then referments in the bottle to generate the natural and delicate effervescence. The grapes come from experimental 'minimal pruning' vineyards, a technique the Strohmeier would like to switch to in the long run.
