Here is the first Pulcini rosé, something unique and unrepeatable, a little conceived out of necessity a little out of madness (perhaps more the latter...see the label to believe!). Cabernet Sauvignon harvested when not yet ripe and vinified with whole cluster pressing without contact of the juice with the skins, then leaving it to ferment alone, plus Malvasia with a pinch of Alicante macerated briefly on the skins and fermented together, all then blended at the end of fermentation. The Cabernet gives acidity with delicate notes of spices, while the Malvasia rounds it all off with beautiful citrus notes...ah yes!...the volatile...few and right for a drinkability over the top!!!
