Grapes harvested strictly by hand from the old over seventy-year-old vines; destemming always done by hand on a grate, the grapes remain in the tub where the must in contact with the mostly intact grapes, begins to ferment slowly. The must is drawn off as soon as the fermentation starts and poured into non-vitrified terracotta amphoraes coming directly from Impruneta (Tuscany). White flowers and fruits, sapidity, freshness and a delicate finish based on dried fruit that you would never want to end!
