Wine making: only the grapes of the oldest plants of Garganega are selected throughout the vineyard, harvested by hand, in boxes, making a careful selection of the bunches. After being de-stemmed by hand on a grate, the grapes remain in the tub where the must, in contact with the mostly intact berries, slowly begins to ferment. The must is drawn off as soon as the fermentation starts and decanted into amphora, where it continues with the fermentation and refines for the winter-summer period.

Aging: in Impruneta amphora not vitrified on the fine lees and without contact with the skins. No clarification, filtration or addition of sulphites

Serve at: 8-12° C

Food matches: fish dishes not too cooked; excellent also with fresh cheeses;
