Wine making: spontaneous fermentation; part of the grapes with whole bunches maceration in fiberglass; the other part always in fiberglass but with bunches of grapes trampled on bare feet, 4 punching down, then racking, pressing and mixing of both vats with the free-run must and the pressed must. In total about three weeks of maceration on the skins.
Aging: half in steel and the other in old 23hl barrels for about a year; no filtration, clarification or addition of sulphites
Serve at: 14-16° C
Food matches: mixed appetizers, but also with a nice piece of beef!
About him: at the top of the Volvic hill, in the heart of the woods that grow on the “puy de la bannière”, we find large rocks. Rock, in the dialect of Auvergne (that of Alain Gaudet) is called “Rochaille”. "Rochaille" became "Rockaille" and "Rochaille" evidently became Rockaille Billy. And we can't do more than rocking with this splendid Gamay of Auvergne!!!
