Wine making: spontaneous fermentation in cement with short maceration on the skins which can vary from two to five days
Aging: 8 months in large exhausted wooden barrels; no filtration or clarification
Serve at: 10-14 °C
About him: the Carricante according to Eduardo! Grapes all coming from the east side which, thanks to its position, allows you to benefit from greater exposure to the sun, favoring a more complete maturation. During the harvest, only the best grapes are selected and used which, after a brief maceration on the skins, age in old exhausted wooden barrels.The scents are a super mix of fruit, flowers and wild herbs with the addition of chalky notes; in the mouth it's immediately exalted for its sapidity and minerality, to then end up astonishing the taste buds by rediscovering all the sensations initially perceived on the nose.
