Wine making: 40% of Fiano is fermented separately and macerated on the skins in steel for almost two months; 40% of Greco is fermented separately and macerated on the skins in steel for almost nine months; 20% of Fiano and Chardonnay are co-fermented and macerated on the skins for about two months
Aging: in steel for at least 18 months and they have been racked only once to assemble the final blend before bottling; clearly, no addition of sulphites, clarification and filtration
Serve at: 10-14 °C
Food matches: appetizers, grilled fish, pasta with white fish sauce, hot fish appetizers.
About him: Dane's favorite product! A balanced Orange Wine, not overly fruity, structured and energetic, but in no way heavy. Its spectacular dose of acidity and sapidity makes it super vibrant!
