Wine making: fermentation obtained spontaneously in steel tanks. The wine was then left to mature in contact with the skins. No selected yeasts or other substances are added to the wine. The refermentation was restarted in the bottle with must of the same grapes, without using exogenous yeasts.
Aging: in steel tanks on the fine lees and then bottled with its yeasts
Serve at: 10-12 °C
Food matches: splendid as an aperitif and excellent to combine with cured meats and fresh cheeses.
About him: Pet Nat able to warm the hearts even in the coldest moments of the year thanks to its harmonious qualities derived from the long maceration on the skins; wine not filtered or disgorged, then in the bottle there is a little ´background, consisting mainly of its own yeasts. Sun a few hundred bottles produced every year...unmissable!!!
