Wine making: in small open casks of 10 hl, plunging the cap manually several times during the day, to extract all the characteristic perfumes of these varieties; Cosimo 2015 is the result of a completely natural vinification. The fermentation on the skins is about 20 days, only on indigenous yeasts and without the addition of oenological products (except a small amount of sulphites at the time of bottling) it´s done without the addition of selected yeasts or oenological aids, with the exception of small additions of sulfur dioxide before bottling.
Aging: spontaneous malo-lactic fermentation done in oak barriques of 2°, 3° and 4° passage, where the wine has matured for 12 months.
Serve at: 16-18° C
Food matches: great in combination with red meat, game and seasoned cheeses.
About him: the Cosimo is produced by the grapes of the oldest vineyards of the company, which are scrupulously selected one by one during the harvest; It expresses a blend of complex olfactory sensations: fruits such as plum and blackberry add scents of roses, dried flowers and pot-pourri, then sweet spicy notes, to finish with light tastes of tobacco. In the mouth austere entrance, but then releases the flavors of the fruit with the enveloping of the tannins and it has a persistent and perfectly balance between freshness and alcoholism.
