Grape varieties: 50% between Pinot Noir and Syrah; other 50% consisting of about 14 white grape varieties

Wine making: spontaneous fermentation

Aging: partly in old exhausted wooden barrels, partly in steel; no addition of sulphites, clarification and filtration

Serve at: 10-14 °C

Food matches: romantic evening!

About him: it was stored deep in the cellar for a couple of years and put on the market at the time deemed most appropriate. It's the result of a fantastic continuous fermentation started immediately after the 2018 harvest. 50% is composed of Pinot Noir and Syrah to which the best bunches of the varieties harvested later were added in small quantities to the ferment to keep it in function while harvesting. Over 14 different varieties ended up in this wine, too many to list but about 50% red and the other 50% white. Sapid, fresh, energetic and very complex. Drink it fresh! Super Dane!!!
