Wine making: spontaneous fermentation of destemmed grapes with maceration on the skins for 30 days in steel
Aging: part in concrete vats and other in old wooden barrels for almost 18 months; no addition of sulphites, no filtered or clarified
Serve at: 10-14 °C
Food matches: perfect with mixed appetizers of not too tasty fish; excellent with octopus alla piasta!
About him: 30 days of relax on the skins for this Pinot Grigio! A very fresh, vibrant wine, easy to drink and from the low alcohol content. Immediately entrancing aromas based on white pulp fruits such as apricot, melon and peach also corresponded to the palate after a few minutes necessary to open completely. Excellent sapidity, excellent acidity... well...super excellent!!!
