Wine making: the grapes are hand-picked and pressed in the vineyard, then left in an open vat of wood, where the must remains in contact with the skins for two days. The must ferments spontaneously and without any temperature control in an old oak barrel. Only one racking with the January moon and in March it's bottled
Aging: some months in old and used wooden barrels

Food matches: savory pies, fresh and seasoned cheeses, pasta with white fish sauce
About him: light yellow with golden reflections and ocher nuances. On the nose it expresses aromas of yellow flowers, ripe fruit, honey hints and slight woody nuances. On the palate it has a good structure, with rich and pulpy fruit, good complexity and freshness.
