Wine making: total absence of corrective agents and chemicals. The grapes are harvested in two stages at the beginning of October giving two different levels of maturity; after destemming, it's partly left whole grain and partly slightly crushed with the feet and put by hand in small concrete pits without the use of pumps. Fermentation takes place spontaneously without selected yeasts, sulfur dioxide and temperature control with a maceration of about 40 days.
Aging: in wood and cement for 24 months; bottled without filtration or stabilization.
Serve at: 16-18° C
Food matches: snails cooked in tomato sauce; super with the rabbit in pork!
About him: the Sangiovese according to Stefano! Developed in collaboration with sommelier friends Basile Passe and Yoan Tavares creators of Le Vin des Potes, an organization that has managed to bring together 11 winemakers who all work with the same philosophy based on respect for mother nature, making their grapes naturally. And in a natural way this splendid wine was also produced, alive and authentic, a real Sangiovese!!!
