Wine making: spontaneous fermentation without maceration on the skins; then follow the refermentation in bottle
Aging: in old wooden barrels for a few months, plus one year in bottle; no addition of sulphites, no filtered or clarified
Serve at: 6-8 °C
Food matches: excellent as an aperitif but also with pizza, fresh cheeses and mixed cold cuts
About him: the rosé version of the Ombretta house, obtained with the use of both white and red grapes vinified together, but without maceration on the skins. More important bubbles than white version, with aromas that refer to citrus fruits such as lime but also grapefruit and red orange; nice sapidity, as well as a super acidity that cleanses the palate and makes you want to drink again. Other Pet Nat to absolutely have in your cellar during the summer!
