Wine making: spontaneous fermentation with only indigenous yeasts; 1/3 of the grapes undergo a brief maceration, while the other 2/3 go to direct pressing; no addition of sulphites, no filtered, no clarified.

Serve at: 10-14° C

Food matches: appetizers and first courses based on not too tasty fish; excellent with Sushi and Sashimi!

About him: Chenin bomb!!! Short maceration for one third of the grapes which extracts splendid aromas of flowers and white-fleshed fruits! Very delicate and with a good sapidity that will inevitably lead you to be addicted to it!!! Attention, vintage produced in very few copies...can't miss it!
