Wine making: fermentation takes place spontaneously in steel by indigenous yeasts present in the skins; the maceration/fermentation lasts for 21 days during which the peels slowly give the wine the color and aromas of the Catarratto
Aging: from 12 to 16 months depending on the evolution of the wine in steel barrels; then one year in bottle;
Serve at: 10-14 °C
Food matches: excellent with fish stew; various fish soups always in stew or however well-flavored;
