Wine making: total absence of remedies and chemicals. The grapes are partially left in whole grain and partly slightly pressed with feet, then by hand, put in small cement casks without use mechanic pumps. Fermentation done spontaneously without selected yeasts, sulfur and temperature control.
Aging: in wood and cement for 14 months; bottled without filtration or stabilization.
Serve at: 16-18° C
Food matches: snails cooked in tomato sauce; super with the rabbit in pork!
About him: impenetrable ruby red with purple reflections. Give persuasive aromas of fruit in alcohol, sweet paprika, vanilla and powder. Followed by notes of Bulgarian rose, carob, juniper berries, rhubarb and green pepper. Mouth in substantial balance, with an intake of alcohol perfectly balanced by the tannin extracted in a masterly manner. In the long final emerge again the sensations encountered on the nose; ends with flavors of red fruit and slight sapidity.
