Aging: in chestnut and oak barrels of third passage with walls reworked to remove them from the previous refinements; the decreased thickness also provides greater oxygenation to the wine during the aging.
Serve at: 16-18° C
Food matches: spectacular paired with typical Lazio dishes such as Roman lamb, spaghetti alla carbonara, spaghetti with cheese and pepper, saltimbocca alla romana etc...
