Wine making: the various varieties co-ferment in three separate lots and then all be united; there are partial whole bunch fermentations, with short maceration and direct pressing
Aging: almost exclusively in steel; bottled without filtration, clarification or addition of sulphites.
Serve at: 10-14 °C
Food matches: appetizers, grilled fish, pasta with white fish sauce, hot fish appetizers.
