Wine making: spontaneous fermentation with separate vinification of each variety; the juice of the Jacquére and Altesse remains in contact with the skins, with punching down, from two weeks to three months depending on the variety; the idea is to be able to precisely control the evolution of the juice and balance the wine based on the behavior of each grape variety. The Roussanne is pressed directly.

Aging: the wines age partly in old barriques, but also a small part in new ones, for one year and are assembled about two months before bottling; further age in the bottle for approximately three years; no added sulphites, no filtered or clarified

Serve at: 10-12° C
