Wine making: spontaneous fermentation with carbonic maceration (whole bunch) for about three weeks without pressing and minimal pumping over to extract slightly; no addition of sulphites, no filtered, no clarified.

Aging: in large old wooden barrels of 25/30 hl for the necessary time

Serve at: 16-18° C

Food matches: excellent as an aperitif to be served with lightly seasoned cold cuts and fresh cheeses

About him: true to themselves (those who know them will understand...) Raph 'and Emelie give us a spring Gamay, super fruity!
