Wine making: Trebbiano is harvested in a phase where the grapes are premature to ensure high acidity and is pressed directly in whole bunches, while Malvasia is harvested in an overripe phase and is macerated on the skins for about 15 days.

Aging: in steel for about 6 months

Food matches: aperitifs, fried fish, blue fish

About him: new cuvée of the limited series by Pulcini house. A blend of Trebbiano harvested when the grapes still unripe to obtain a juice with high acidity and of Tuscan Malvasia harvested in the super-ripening phase to then extract with the maceration on the skins for 15 days as much matter and aromas as possible. Thus an exciting blend with a spectacular drink is born, a delicately soft but also vibrant wine sip after sip, with a mix of white-fleshed fruits such as peach and apricot, but also herbs such as chamomile and tea.
