Grape variety: 100% Pinot Gris
Alcohol: 11,5% vol
Wine making: the grapes are de-stemmed and left to macerate on the skins for about four days; it's then pressed and fermented in an 800L ceramic amphora for two weeks until the right amount of sugar is obtained to end up in the bottle.
Aging: in bottle on the lees for about five months. No clarification, filtration or addition of sulphites
Serve at: 8-10 °C
Food matches: appetizers, grilled fish, pasta with white fish sauce, hot fish appetizers.
