Wine making: the two vines used for this cuvée are harvested separately but fermented together; the Cab Franc is harvested first, de-stemmed and left to ferment; the Cabernet Sauvignon usually matures about 10 days later, after the harvest it's de-stemmed and added to the Cab Franc to macerate together for a total of three weeks.
Aging: about 10 months in old French oak barriques; no clarification, filtration or addition of sulphites

About him: after more than five years of experimentation, Cédric has finally decided to blend together all his various micro-terroirs to create a great red wine. Métisse is a blend of about two thirds of Cabernet Franc and one third of Cabernet Sauvignon. A show based on herbs and fresh earth that recall the scents of the Loire Valley. A splendid complex and apparently simple red wine. Super!
