Wine making: spontaneous fermentation with carbonic maceration for approximately two weeks with manual punching down
Aging: partly in new barriques and partly in old ones for about one year; further age in bottle for two years; no added sulphites, no filtered or clarified
Serve at: 10-12° C
About him: Pierra Menta is made from the ancient native Gringet vine, here brought back to its splendor by recovering a very old micro-plot near which the winemaker plans to plant other vines until he has half a hectare.
The quince makes itself felt right from the attack and the minerality supports this note beautifully. White fruit, floral, lots of structure and nice acidity. The length is also incredible... "One of the most beautiful wines I have produced this year", says Jean-Yves. Very few bottles...!
