Wine making: spontaneous fermentation without temperature control with its own natural yeasts and without the aid of other oenological products. Grapes with short maceration on the skins

Aging: in chestnut and oak barrels of third passage with walls reworked to remove them from the previous refinements; the decreased thickness also provides greater oxygenation to the wine during the aging.

Serve at: 10-14° C

Food matches: appetizers of not very tasty fish; white soup of moscardini; white sea salad.

About him: he's a red disguised as a white, but for others it could be a white with the appearance of a red...in any case it's always Pocorosso!
