Wine making: spontaneous fermentation with indigenous yeasts; maceration on the skins in open vats for seven days;
Aging: for two thirds of the mass 7 months in fiberglass and one third in 54L glass demijohns; once blended, follow with two more months in the bottle; no filtration, clarification or addition of sulphites
Serve at: 10-14 °C
Food matches: perfect as an aperitife
About him: always following the peasant tradition and thanks to the vineyards all in complantation, another blend of pure terroir consisting of Trebbiano in the majority, but also Coda di Pecora, Falerno and Moscato.White flowers and many herbs, when opening delicately fruity notes come out which, thanks also to the excellent sapidity, continually encourage you to drink.
