Grape variety: 100% Verdejo from a single plot located inside the city at 800 m; very ancient vines, aged between 130 and 180 years, which have survived over time thanks to the gravelly and stony soil and the protection of the surrounding houses themselves.
Alcohol: 13,5% vol
Volume: 0,75l
Wine making: spontaneous fermentation; the grapes are partially de-stemmed and subjected to a light maceration on the skins for a few hours; subsequently they are pressed directly in a vertical press and the must obtained then undergoes alcoholic fermentation in terracotta amphorae from La Mancha.
Aging: in terracotta amphorae from La Mancha (tinajas); not filtered or clarified, nor added sulphites
Serve at: 8-12° C
About him: Vallejo is the result of respect for the land and tradition. A white wine produced without intervention that highlights the local variety, which is almost certainly a red grape with a white color. Verdejo in its purest form.
Quince aromas, notes of aromatic herbs and sumptuous mineral touches. On the palate it's intense, concentrated and robust. A dense and voluminous wine with a long and exquisitely saline finish.
