Wine making: base of Pignoletto (97%) fermented spontaneously with its indigenous yeast in stainless steel and cement without clarification or filtration; draught with must (3%) of Albana (2011) and Riesling (2012) for the refermentation that always happens spontaneously in the bottle with the arrival of Spring

Aging: in steel

Temperature and service advice: 10-12 °C; the wine can be served without shaking the bottle or decantering it if you want to separate it from its yeast at the bottom. We also suggest shaking slightly before open to enjoy it with all its yeast

Food matches: great as an aperitif, cheeses and salami; also to try with truffle dishes

About him: wine spontaneously fermented in bottle; it does not disgorging, so it naturally looks cloudy on yeasts, which safeguard longevity. Just 12 months on the yeasts exalt an antique flavor, giving you clear and defined lemon balmy scents, with a tasty, juicy, exciting and long, balsamic finish.
