About him: the most sublime Cabernet Franc of this young and prodigious vigneron from the Loire. The vines in the Palennes vineyard are well established (around 70 years) and the fruit is of excellent quality. Here the grapes go through winemaking as a blend of both de-stemmed and whole bunches - this technique results in an extraordinarily fine tannic structure once the wine is complete, as the contact between the must and the stems of the grapes is carefully managed. There is always a great depth in Saint-Lô's Cabernet Franc; the fruit of the sour cherry, the bitter dark chocolate and the characteristic herbaceous bearing of the varietal blend perfectly. The wine is shiny and soft. BOOM!!!
