About him: the first vintage of a new Chenin Blanc cuvée that comes from a plot that François is now renting from Sylvain Dittiere. The parcel is located in an ancient river bed and the vines are about 30 years old. A third of the harvest macerated whole bunches for about 2 weeks, while the rest was pressed directly. They were kept separate in 600L barrels plus the Stockinger (1200L), then the whole thing was put together a few weeks before bottling. Super texture, incredible fruit, almost tropical but with a lot of minerality. If a good morning starts in the morning...!
